  When I activate this card's [When Attacking] effect and my opponent's Digimon would leave the battle area due to processing the 1st part, an immediate-type effect such as "when [...] would leave" removes this card from the battle area.
  After that, can I process the part of the effect following after "then" in this card's effect?

  No, you cannot.
  As this card has left the battle area, it doesn't have digivolution cards whose colors could be determined. Thus, the effect cannot be processed.
